Tamarind Curry

A great and tasty way to use up some tamarind paste.  Ingredients 400g tofu 1 tbsp coriander seeds 1/4 tsp cumin seeds 1/4 tsp fenugreek seeds 1/3 tsp black peppercorns 1/8 tsp fennel seeds 1 tbsp sesame seeds 1/2 tsp chilli flakes 1 large tomatoes 1 tsp tamarind paste 2 tbsp ketchup 1/2 inch ginger 1 stock cube 1 small onion 4 cloves garlic 8 curry leaves 1/2 tsp smoked paprika 1 small cauliflower 1 small potato 1 can coconut milk   Method Dry fry seeds until fragrant and then grind....

Oreo Cheesecake

My birthday favourite. I love that oreos are vegan!  Ingredients 3 packets of oreos 95g vegan butter 600g vegan cream cheese 250ml vegan double cream 120g icing sugar 2 tsp vanilla extract  Method Crush 2 packets of biscuits. Melt your butter and mix with crushed biscuits. This is your base. Line a cake tin with the base. Refridgerate for 30 minutes. Mix together cream cheese, icing sugar, and vanilla....

Kung Pao Cauliflower

Chickpeas are definitely underrated!  Ingredients 4 tbsp oil 3 tbsp curry powder 1 large onion 4 garlic cloves 1 tsp allspice 1/2 tsp nutmeg 1.5 tsp smoked paprika 2 tsp thyme 1 tsp ground cumin 1 tsp white pepper 2-3 medium potatoes 2 oxo cubes 2 400g can chickpeas 1 cup water 1/2 can coconut milk 1/2 tsp cayenne pepper 2-4 large handfuls spinach 3-4 large sweet potatoes  Method Fry sliced onion until soft....

Pad Thai

I had never cooked with tamarind paste before this recipe but wish I did!  Ingredients 200g rice noodles 200g firm tofu (torn into chunks) Cornflour Onion 4 cloves garlic 1 red pepper Handful of bean sprouts 3 spring onions 3 tbsp soy sauce 3 tbsp sugar 3 tbsp tamarind paste  Method Coat tofu in cornflour and fry until crispy. Potato & Sausage Soup

A Tuscan dish that I wasn’t really sure what it’d turn out like: it turned out good! And easy. A great combo.  Ingredients 400g vegan sausage (any) 250g baby potatoes 2 - 3 tbsp nurtitional yeast 0.5 tsp oregano 4 cloves garlic 1 - 2 shallots 2.5 - 3 cups water 2 beef stock cubes 2 bay leaves 3 - 5 large handfuls spinach 60g cashews + 1 cup water  Method Soak your cashews in the water....

Chocolate Mug Cake

A quick, easy, tasty dessert for one! From Loving It Vegan.  Ingredients 4 tbsp all purpose or bread flour 2 tbsp cocoa powder 3 tbsp white sugar 1/4 tsp baking powder 4 tbsp plant milk 2 tbsp flavourless oil/margarine 1/4 - 1/2 tsp vanilla extract Chocolate chips  Method Mix everything well in a large mug/small bowl. Cinnamon Rolls (bread maker)

My first ever bread maker recipe! From Go Dairy Free.  Ingredients 3/4 cup + 2 tbsp warm water 2 tbsp oil/margarine (flavourless) 2.5 cups bread flour 1/4 cup white sugar 1 tsp yeast* 1 tsp salt 1/3 cup brown sugar 2 tsp ground cinnamon 2 tbsp margarine 1 cup icing sugar 1-2 tbsp plant milk 1/2 tsp vanilla extract (optional)  Method Put the first 6 ingredients (up to and including the salt) in your bread maker (in that order) on the dough setting....

Basic Bread (bread maker)

A classic. No need to buy bread ever again (unless it’s a different kind).  Ingredients 300ml warm water 1 tsp sugar 2 tsp salt 500g bread flour 2 tsp yeast Oil  Method Put everything in the bread machine in that order. Mix the salt and the sugar in the water before adding in the flour. This is roughly a 2lb loaf on my machine. Customise your crust settings and whatnot!...

Miso Mushroom Sandwich
