Caramelised Onion and Tomato Pasta

A very flavourful pasta dish! From Rainbow Plant Life. Ingredients 2 tbsp olive oil 2 med onions 4-6 garlic cloves 1 tsp red pepper flakes 1 tsp oregano 150g tomato paste 1-3 tbsp soy sauce 2 tbsp nutritional yeast 4-5 sundried tomatoes 200-275g spaghetti Method Boil your pasta (you’ll need the water for later). Thinly slice your onions. Then fry in a non-stick pan for 20 mins. Stir frequently. Add in sliced garlic for 5 mins. Add in red pepper flakes, oregano and cook for 30 seconds. Peppercorn Gnocchi

There are people who like pepper, and then there are people who love pepper. This one’s for you. Ingredients 400g gnocchi 1.5 tsp crushed peppercorns 4 tbsp white wine 1 stock cube 1/4 tsp garlic powder 4 tbsp water 1 cup (around 250ml) cream (see notes) Salt and pepper to taste Method Fry your gnocchi until crispy (see notes). Vodka Pasta

As someone who doesn’t love vodka, I was surprised I loved this recipe! Ingredients 1/2 cup cashews 120ml water 3 tbsp oil 1 tsp red pepper flakes (see notes) 3 garlic cloves Can of chopped tomatoes 400g 2 tbsp vodka 1 oxo stock cube 1/2-1 tbsp brown sugar 1/4 tsp salt 1.5 tbsp tomato puree Rigatoni pasta Fresh basil Cheese (optional) Method Soak your cashews for 2+ hours. Gochujang Pasta

One of my favourite, simplest ways of serving pasta. Ingredients 200g spaghetti 1 small onion 1 tsp garlic powder 2 tbsp gochujang paste 1/2 cup pasta water 200ml vegan single cream 1/2 tsp salt 1 tbsp nutritional yeast Method Boil pasta. Amok Style Curry

The Amok is a Cambodian curry, which is steamed with fish and served in banana leaves on special occasions.
