Gochujang Pasta

One of my favourite, simplest ways of serving pasta.  Ingredients 200g spaghetti 1 small onion 1 tsp garlic powder 2 tbsp gochujang paste 1/2 cup pasta water 200ml vegan single cream 1/2 tsp salt 1 tbsp nutritional yeast  Method Boil pasta. Fry onion until soft. Add in gochujang, garlic and fry for another minute or two, Add remaining ingredients and season to taste. Mix with cooked spaghetti and serve (with vegan cheese if you wish)....

Lasagne

Using the spagbol sauce and a good white sauce, this sets the expectations for vegan lasagne.  Ingredients Red Sauce 6 regular tomatoes 350g cherry tomatoes Garlic bulb Thyme Oregano Salt Onion Veg stock cube Red wine stock pot (or another regular veg one) 2 tsp italian herbs 1/2 tsp paprika 1/4 tsp cayenne pepper 200-250g vegan mince 1 cup water 1 tbsp tomato puree 2 tbsp nutritional yeast 1/2 tsp sugar 150g spinach White Sauce 3 tbsp butter or oil 100g plain flour 800ml soya milk 3 tbsp nutritional yeast 1/4 tsp nutmeg 1 bay leaf Black pepper   Method Chop your tomatoes on half and cut the bottom off the garlic and place on a baking tray....

Amok Style Curry

The Amok is a Cambodian curry, which is steamed with fish and served in banana leaves on special occasions. Tofu Lok Lak

During my recent trip to Cambodia, I had the privilege of being taught some traditional Khmer cuisine. Lok lak was something that I loved, and so the first thing I wanted to do when I got back was try making my own! Simple Mushroom Risotto

This is the risotto that made my risotto-hating partner realise they like risotto. Ingredients Shallot 4 garlic cloves 100g mushrooms 1 or 2 veg stock cubes 1/2 cup risotto rice 2 cups water 2 tsp white wine vinegar 4 tbsp nutritional yeast Fresh parsley  Method Fry shallot and garlic. Butter Tofu Curry

This is a slow cooker tofu butter curry that is stupidly quick to prepare and also stupidly delicious and creamy. Ingredients 4 diced shallots 1 can coconut milk 170g tomato paste 3.5 tsp garam masala 1 tsp ginger 1 tsp curry powder 1 tsp salt 1/2 tsp chilli powder 1/2 tsp black pepper 1/2 tsp dried fenugreek leaves 1/2 tsp chilli flakes (optional) 450g tofu (we like the smokey toofoo blocks) 3 tsp lime juice 1 tsp brown sugar (optional)   Method Turn on your slow cooker to medium and let it warm up....

Tacos

Umami Ragu
