This recipe comes from BOSH, and when they said it was one of their most popular, I can understand why. This is, by far, my most asked for recipe! Quick, easy to make, hella tasty; what more do you want?

Ingredients

  • 4 tbsp (60 ml) water
  • 2 tbsp tahini
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp chilli flakes
  • 1 tsp sugar
  • 200g ish of mushrooms
  • 200-250g vegan mince (I like Linda’s)
  • 4 garlic cloves
  • Thumb of ginger
  • 1 tsp chinese 5 spice
  • 2 servings of stir fry noodles  

 

Method

  1. Stir the first 7 ingredients together in a jug.
  2. Fry mushrooms with oil and a pinch of salt until they shrink.
  3. Add in your mince and fry for a few more minutes.
  4. Add in your 5 spice, garlic and ginger and fry for 1-2 minutes.
  5. Add in your stir fry noodles and sauce, fry until noodles are done.
  6. Serve with spring onions and sesame seeds.

It may look a little dry, but trust me, it is super flavourful!
