While I’m not going to sit here and tell you that this tastes like mac and cheese, I will tell you that you’ll love this recipe in its own way! The recipe comes from Madeleine Olivia, a fellow Cornish vegan, and is one of the few recipes where I’ve barely altered it :)
Ingredients
- 60g cashews (soaked for 2+ hours)
- 1 cup nutritional yeast
- 1 cup plant milk
- 1 cup water
- 1 tsp onion granules
- 1 tsp garlic granules
- 1 tsp salt
- 1 tsp English mustard
- 1/2 tsp turmeric
- 1/2 tsp paprika
- Pinch of chilli powder
- Black pepper
- Juice of 1 lemon OR 3 tbsp lemon juice
- 3 tbsp cornflour
Method
- Blend your ingredients.
- Put on med/high heat to thicken and stir continuously so it doesn’t stick.
- Serve with pasta.
