While I’m not going to sit here and tell you that this tastes like mac and cheese, I will tell you that you’ll love this recipe in its own way! The recipe comes from Madeleine Olivia, a fellow Cornish vegan, and is one of the few recipes where I’ve barely altered it :)  

 

Ingredients

  • 60g cashews (soaked for 2+ hours)
  • 1 cup nutritional yeast
  • 1 cup plant milk
  • 1 cup water
  • 1 tsp onion granules
  • 1 tsp garlic granules
  • 1 tsp salt
  • 1 tsp English mustard
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • Pinch of chilli powder
  • Black pepper
  • Juice of 1 lemon OR 3 tbsp lemon juice
  • 3 tbsp cornflour  

 

Method

  1. Blend your ingredients.
  2. Put on med/high heat to thicken and stir continuously so it doesn’t stick.
  3. Serve with pasta.
