Ingredients

Mushrooms

  • 400g oyster mushrooms
  • 1 tbsp white miso
  • 1/2 tbsp soy sauce
  • 1 tbsp oil

Sauce

  • 100g soaked cashews
  • 1 tbsp miso
  • 2-3 tbsp lemon juice
  • 1 garlic clove
  • 3 tbsp n. yeast
  • 2-3 tbsp water
  • Salt
  • Bread  

 

Method

  1. Tear the mushrooms into strips and massage in the miso, soy, and oil.
  2. Roast for 15 mins at 220 degrees. Stir them, and put back in for another 10-15 mins.
  3. Blend the rest of the ingredients (minus the bread!) to make the sauce.
  4. Make your sandwich!
