Ingredients

  • 3 leeks (500g)
  • 4 garlic cloves
  • 2x 400g beans (any, one undrained)

Sauce

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1.5 tsp paprika
  • 1/2 tsp chilli flakes
  • 3 medium sun-dried tomatoes
  • 250g jarred roasted red pepper
  • 40g plain almonds
  • 150ml water  

 

Method

  1. Fry and sweat leeks until soft (5-10 mins).
  2. Meanwhile, blend your sauce.
  3. Add in garlic for another minute.
  4. Add in beans, one without its liquid, one with it. Simmer 8 minutes, covered.
  5. Add in romesco sauce for another 5. Remove lid if too liquidy.
  6. Serve with bread and basil. Season to taste.
