Ingredients
- 3 leeks (500g)
- 4 garlic cloves
- 2x 400g beans (any, one undrained)
Sauce
- 2 tbsp olive oil
- 1 tsp salt
- 1.5 tsp paprika
- 1/2 tsp chilli flakes
- 3 medium sun-dried tomatoes
- 250g jarred roasted red pepper
- 40g plain almonds
- 150ml water
Method
- Fry and sweat leeks until soft (5-10 mins).
- Meanwhile, blend your sauce.
- Add in garlic for another minute.
- Add in beans, one without its liquid, one with it. Simmer 8 minutes, covered.
- Add in romesco sauce for another 5. Remove lid if too liquidy.
- Serve with bread and basil. Season to taste.
