This delicious Korean dish is a combination of ramen and tteokbokki, a thick, saucy soup with Korean rice cakes. Perfectly sweet, salty, and spicy.
Ingredients
- 400g tteok (Korean rice cakes)
- 2 stock cubes
- Half small cabbage
- 1 onion
- 4 tbsp gochujang
- 1 tbsp gochugaru
- 2 tbsp soy sauce
- 2 tbsp golden syrup
- 4 garlic cloves
- 1/3 cup white wine (or sake), optional
- 200g smoked tofu
- 1 tsp MSG (optional)
- 1 serving ramen noodles
- Spring onions
Method
- Soak your tteok in warm water for 10 minutes.
- Meanwhile, boil 4 cups of water and your stock cubes.
- Add in your cabbage and onion.
- In a jug, mix together your gochujang, gochugaru, soy sauce, golden syrup and garlic.
- Add your tteok, sauce, wine, and tofu to your broth.
- Simmer for 10 minutes with the lid on, 10 minutes with the lid off.
- In the last 5 minutes, add in one servings of ramen noodles and your MSG.
- Serve with spring onions and season to taste.
Additional notes
- Use less gochujang if you dislike spice
