This delicious Korean dish is a combination of ramen and tteokbokki, a thick, saucy soup with Korean rice cakes. Perfectly sweet, salty, and spicy.

Ingredients

  • 400g tteok (Korean rice cakes)
  • 2 stock cubes
  • Half small cabbage
  • 1 onion
  • 4 tbsp gochujang
  • 1 tbsp gochugaru
  • 2 tbsp soy sauce
  • 2 tbsp golden syrup
  • 4 garlic cloves
  • 1/3 cup white wine (or sake), optional
  • 200g smoked tofu
  • 1 tsp MSG (optional)
  • 1 serving ramen noodles
  • Spring onions  

 

Method

  1. Soak your tteok in warm water for 10 minutes.
  2. Meanwhile, boil 4 cups of water and your stock cubes.
  3. Add in your cabbage and onion.
  4. In a jug, mix together your gochujang, gochugaru, soy sauce, golden syrup and garlic.
  5. Add your tteok, sauce, wine, and tofu to your broth.
  6. Simmer for 10 minutes with the lid on, 10 minutes with the lid off.
  7. In the last 5 minutes, add in one servings of ramen noodles and your MSG.
  8. Serve with spring onions and season to taste.  

 

Additional notes

  • Use less gochujang if you dislike spice
