As someone who doesn’t love vodka, I was surprised I loved this recipe!  

 

Ingredients

  • 1/2 cup cashews
  • 120ml water
  • 3 tbsp oil
  • 1 tsp red pepper flakes (see notes)
  • 3 garlic cloves
  • Can of chopped tomatoes 400g
  • 2 tbsp vodka
  • 1 oxo stock cube
  • 1/2-1 tbsp brown sugar
  • 1/4 tsp salt
  • 1.5 tbsp tomato puree
  • Rigatoni pasta
  • Fresh basil
  • Cheese (optional)  

 

Method

  1. Soak your cashews for 2+ hours.
  2. Blend cashews with water.
  3. Put on your pasta. Fry red pepper flakes and crushed garlic.
  4. Add in your vodka, sugar, tomatoes, salt and puree. Simmer for 5 minutes.
  5. Add in your cashew cream and allow to thicken a bit. Season to taste.
  6. Serve with basil and cheese.
