As someone who doesn’t love vodka, I was surprised I loved this recipe!
Ingredients
- 1/2 cup cashews
- 120ml water
- 3 tbsp oil
- 1 tsp red pepper flakes (see notes)
- 3 garlic cloves
- Can of chopped tomatoes 400g
- 2 tbsp vodka
- 1 oxo stock cube
- 1/2-1 tbsp brown sugar
- 1/4 tsp salt
- 1.5 tbsp tomato puree
- Rigatoni pasta
- Fresh basil
- Cheese (optional)
Method
- Soak your cashews for 2+ hours.
- Blend cashews with water.
- Put on your pasta. Fry red pepper flakes and crushed garlic.
- Add in your vodka, sugar, tomatoes, salt and puree. Simmer for 5 minutes.
- Add in your cashew cream and allow to thicken a bit. Season to taste.
- Serve with basil and cheese.
