Rabokki

This delicious Korean dish is a combination of ramen and tteokbokki, a thick, saucy soup with Korean rice cakes. Perfectly sweet, salty, and spicy. Ingredients 400g tteok (Korean rice cakes) 2 stock cubes Half small cabbage 1 onion 4 tbsp gochujang 1 tbsp gochugaru 2 tbsp soy sauce 2 tbsp golden syrup 4 garlic cloves 1/3 cup white wine (or sake), optional 200g smoked tofu 1 tsp MSG (optional) 1 serving ramen noodles Spring onions  Method Soak your tteok in warm water for 10 minutes....

Mac And *Not* Cheese

While I’m not going to sit here and tell you that this tastes like mac and cheese, I will tell you that you’ll love this recipe in its own way! The recipe comes from Madeleine Olivia, a fellow Cornish vegan, and is one of the few recipes where I’ve barely altered it :)  Ingredients 60g cashews (soaked for 2+ hours) 1 cup nutritional yeast 1 cup plant milk 1 cup water 1 tsp onion granules 1 tsp garlic granules 1 tsp salt 1 tsp English mustard 1/2 tsp turmeric 1/2 tsp paprika Pinch of chilli powder Black pepper Juice of 1 lemon OR 3 tbsp lemon juice 3 tbsp cornflour  Method Blend your ingredients....
