Ingredients 200g rice noodles 200g firm tofu (torn into chunks) Cornflour Onion 4 cloves garlic 1 red pepper Handful of bean sprouts 3 spring onions 3 tbsp soy sauce 3 tbsp sugar 3 tbsp tamarind paste Method Coat tofu in cornflour and fry until crispy. Chocolate Mug Cake

A quick, easy, tasty dessert for one! From Loving It Vegan. Ingredients 4 tbsp all purpose or bread flour 2 tbsp cocoa powder 3 tbsp white sugar 1/4 tsp baking powder 4 tbsp plant milk 2 tbsp flavourless oil/margarine 1/4 - 1/2 tsp vanilla extract Chocolate chips Method Mix everything well in a large mug/small bowl. Microwave at roughly 900W for 90 seconds. Additional notes It is better underdone than overdone. Chocolate chips can just be broken up chocolate. I highly recommend adding it!

Cinnamon Rolls (bread maker)

My first ever bread maker recipe! From Go Dairy Free. Ingredients 3/4 cup + 2 tbsp warm water 2 tbsp oil/margarine (flavourless) 2.5 cups bread flour 1/4 cup white sugar 1 tsp yeast* 1 tsp salt 1/3 cup brown sugar 2 tsp ground cinnamon 2 tbsp margarine 1 cup icing sugar 1-2 tbsp plant milk 1/2 tsp vanilla extract (optional) Method Put the first 6 ingredients (up to and including the salt) in your bread maker (in that order) on the dough setting. Mix together your brown sugar and cinnamon and melt your margarine. Roll your dough into a rectangle (9x11 inches) on a lightly floured surface. Spread the margarine and sprinkle your cinnamon sugar all over. From one of the short sides, roll your dough. Cut into roughly 9 pieces. Place into a greased baking dish/tray. Leave in a warm place for an hour, or the fridge overnight. Bake for 20 mins at 190 degrees. Meanwhile, mix your icing sugar, milk, and vanilla in a bowl. Ingredients Mushrooms 400g oyster mushrooms 1 tbsp white miso 1/2 tbsp soy sauce 1 tbsp oil Sauce 100g soaked cashews 1 tbsp miso 2-3 tbsp lemon juice 1 garlic clove 3 tbsp n. yeast 2-3 tbsp water Salt Bread Method Tear the mushrooms into strips and massage in the miso, soy, and oil. Simply delicious. Ingredients 1 red pepper Handful of baby sweetcorn Half a courgette 1 block of tofu (smoked is good!) 4-6 spring onions Chillies to taste 2 tbsp vegan fish sauce/veggie oyster sauce White pepper 1.5 tbsp sugar 3 tbsp hot water 3-4 tbsp soy sauce 1/2 tbsp worcester sauce/vinegar 1/4 tsp MSG 200g dried noodles 3 cloves garlic Method Fry all your veg in some oil until soft (not garlic or spring onion). Make space and fry the tofu in the middle with fish sauce and sprinkle of white pepper until it is crispier. Add in other sauce ingredients and bring to simmer. Cook your noodles. I don’t often roast veggies, but this converted me :p Ingredients 600g potatoes diced 1 tsp oregano 1 tsp thyme 1 tsp onion granules Lemon zest Oil 1 tsp harissa 2 tsp golden syrup* 1 tsp cumin Can of chickpeas 1 broccoli head chopped 150g cherry tomatoes 1 cup soy yoghurt plain 1 cucumber 1/4 cup fresh dill 2 tbsp lemon juice Salt and pepper Method Turn oven to 200 degrees. Add potatoes and coat with zest, thyme, oregnao, onion granules, salt and oil (can add to bowl and mix/shake) then bake for 40 minutes. Halfway, combine harissa, syrup, cumin, chickpeas, broccoli and tomatoes and roast for 20 minutes. To make your sauce, mix your yoghurt, cucumber, dill, lemon juice and season.
