Peppercorn Gnocchi

There are people who like pepper, and then there are people who love pepper. This one’s for you. Ingredients 400g gnocchi 1.5 tsp crushed peppercorns 4 tbsp white wine 1 stock cube 1/4 tsp garlic powder 4 tbsp water 1 cup (around 250ml) cream (see notes) Salt and pepper to taste Method Fry your gnocchi until crispy (see notes). Vodka Pasta

As someone who doesn’t love vodka, I was surprised I loved this recipe! Ingredients 1/2 cup cashews 120ml water 3 tbsp oil 1 tsp red pepper flakes (see notes) 3 garlic cloves Can of chopped tomatoes 400g 2 tbsp vodka 1 oxo stock cube 1/2-1 tbsp brown sugar 1/4 tsp salt 1.5 tbsp tomato puree Rigatoni pasta Fresh basil Cheese (optional) Method Soak your cashews for 2+ hours. Blend cashews with water. Put on your pasta. Fry red pepper flakes and crushed garlic. Add in your vodka, sugar, tomatoes, salt and puree. Simmer for 5 minutes. Chilli Coriander Noodles

We love recipes that can be super tasty and done super quickly! This one doesn’t even involve chopping! Spring Onion Noodles

Can’t go wrong with soy sauce and oil! Ingredients 1 bunch of spring onions (4-7 large) 2 tbsp oil 2-3 tbsp soy sauce 2 servings of stir fry noodles Method Heat oil. Fry your spring onions until they begin to brown. Add in noodles and soy sauce. Heat until noodles are done. Additional notes This is a very malleable recipe; alter the oil and soy to your liking! Gochujang Pasta

One of my favourite, simplest ways of serving pasta. Ingredients 200g spaghetti 1 small onion 1 tsp garlic powder 2 tbsp gochujang paste 1/2 cup pasta water 200ml vegan single cream 1/2 tsp salt 1 tbsp nutritional yeast Method Boil pasta. Jackfruit and Gravy Chips

I know, sounds a bit cursed right? Hold off your judgement until you’ve tried it! From BOSH. Ingredients 800g jackgruit in water (2 cans) 3 tbsp oil 1 tsp salt 1/2 tsp pepper 1/2 tsp sugar 2 tsp oregano 2 tsp sage 2 tsp onion powder 1 tsp garlic powder 1/2 tsp thyme Gravy granules 2 servings of oven chips Method Toss jackfruit onto a baking tray and coat in seasonings and oil. Use your hands to ensure it’s well covered. Bake for 20 minutes at 200 degrees celsius. Take out of oven and stir. Put back in for another 20 minutes (check you chips, you can add them in now too). Amok Style Curry

The Amok is a Cambodian curry, which is steamed with fish and served in banana leaves on special occasions.
